WHAT IS DESI GHEE?
The word ghee is derived from the Sanskrit word ghr/ghrita- which means sprinkle and in Southern parts of India, it is widely known as Neyyi.
WHY THE PURE DESI GHEE IS SO EXPENSIVE?
As per many researches and statistical reports good breed Indian Buffalo milk contains 7-8% of Fat. When we process this milk, we can extract approximately 75-85% of Butter/loni and 60% of Ghee from it.
For example, if we process 1ltr of milk we get only around 60ml of Ghee. It means, to make 1ltr of Ghee we need approximately 16ltrs of high-quality A2 milk. Apart from Milk purchase, a manufacturer incurs many expenses like Packaging & Operational Cost of the manufacturing facility. Which increases the cost of the product.
WHAT IS BEHIND A1 & A2 HYPE?
“A2 milk marketing gimmick came from New Zealand as the market was saturated there so they brought this term to bring exclusivity to their product. Be assured that in India what you are drinking is A2 milk as all buffalo and indigenous cow milk is 100 percent A2 milk,” Amul managing director Rupinder Singh Sodhi said in a virtual Off the Cuff conversation with ThePrint Editor-in-Chief Shekhar Gupta. According to FSSAI “Standards of milk as specified in Food Safety and Standards (Food Product Standards and Food Additives) Regulations, 2011 do not mention/recognize any differentiation of milk on the basis of A1 and A2 types.
Although the issue regarding adverse/beneficial effects of A1 and A2 types of milk has been discussed in various meetings of the Scientific Panel on Milk and Milk Products, the panel did not come to any conclusion on this issue due to lack of clinical data/risk assessment done at scale so far.
HOW DO WE MAKE DESI GHEE?
We follow the traditional process to make ghee. Our ghee is made from pure buffalo milk that comes from our own Dairy Farm. We use A2 Buffalo milk in making Ghee.
First, we pasteurize the milk, set the curd and keep it overnight. Morning we churn (BILONA) the curd to butter/loni. Churned butter/loni is heated and clarified into pure ghee at optimum temperature.
Our traditional ghee tastes awesome with a rich aroma. It is also very healthy. Traditional ghee is known to cure many health problems.
